Sushi Tower Helps Chef Earn Medal

Congratulations to Masahiro Yamashita, executive chef at the University of Tennessee at Chattanooga. For the third year in a row, he's won a gold medal at the ARAMARK Culinary Excellence Competition. This summer, he will represent the company's Southern region at the national challenge in Boston.



The regional competition was held at the University of Tennessee in Knoxville. Each chef was given just four hours to prepare a three-course meal, complete with a creative presentation, for a panel of judges. Mr. Yamashita made a sushi tower as an appetizer. His main dish featured lamb, and for dessert, he prepared tiramisu. But it was far different from an ordinary tiramisu, using tofu in place of mascarpone cheese.



"When you say 'tofu' to most people they don't like the idea," the chef said. "But if it tastes good in a tiramisu, they think differently."
